Abstract

In this research, the seed kernels were ground and extracted by Diethyl ether. The fatty acids contained in the extracted oil were converted to Methyl esters. Then the Methyl esters were qualitatively and quantitatively determined using the GC technique.
Qualitative and quantitative differences were observed between the fatty acids of Mahaleb seed oil cultivated in Syria and the fatty acids of another oil extracted from a plant cultivated in Turkey. On the other hand, the fatty acids contained in Syrian Mahaleb seed oil and in the seed oil of Mahaleb imported from Africa were qualitatively similar in both Mahaleb seed oils, while the observed differences were only quantitatively. The fatty acids contained in both Syrian Mahaleb and Washnah Cherry seed oils were the same qualitatively but they were differ quantitatively. The Washnah Cherry Fruits were resulted from grafting the sure Cherry on Mahaleb.
