Quantitative Determination Of Sorbitol In Washnah Cherry Fruits

Abstract
Washnah Cherry Fruits is resulted from grafting the sure Cherry on Mahaleb, these fruits contain Sorbitol as a glycoside. Water extracts of Sorbitol glycoside was quantitatively determined photometrically at wavelength 281nm, by comparison with the standard curve of pure Sorbitol glycoside. Then the quantitative determination of Sorbitol was carried out by calculating from the amount of Sorbitol glycoside, because it is known that the decomposition of one mole of Sorbitol glycoside in the Human body under the Enzymes effect generate one mole of Glucose and one mole of Sorbitol.
